About 2 weeks ago, I had the worst health scare. You see, I am obese. I’m not denying it. I’ve faced that fact for the past several years. Since I’ve transferred jobs almost 3 years ago, I’ve become even more unhealthy and I attribute that to stress. Not making excuses. Testament to that is my BP. Prior to this job, even if I was obese, my BP was always normal. It’s not anymore.
Anyway, as I was saying, I had a health scare and this came after my Annual Physical Exam, which I had taken voluntarily (so that I can finally see a doctor). When our HMO released the results the clinic at my office would not release it to me until I had the office doctor explain the results to me. To cut the long story short, there was a notation from my HMO that my ECG showed I’ve possibly had myocardio infarcion AKA Heart Attack. I could have been having mini-episodes without me knowing. That freaked me out.
I’m not one to go to doctors, but I could not let this pass and scheduled the earliest appointment I could get. And guess what? The doctor I went to was flabbergasted as to how the HMO doctor misread my ECG because my ECG was normal. He went back and forth with the reading and the HMO doctor’s recommendation and was just dumbfounded. In fact he took a picture to show his students. Sigh. Nonetheless, this was the wake-up call that I needed.
Sooooo… I am ATTEMPTING to eat healthy now. I quit my Coke Zero habit (maybe I’ll have it once every 3 weeks or so – just to satisfy a craving), lessened my rice intake (down to once or twice a week), switched to chicken and fish (but will eat meat maybe 3x/week) and l cut down on my sugar intake(this is the hardest — I was good the first 2-3 weeks but since then… argh).
These days, whenever I can, I will make sure to cook myself some lunch. And my staple has been pan fried salmon and some quinoa. I still add some lemon butter sauce though just to make sure I still get that tang. I use no more than 2 tbsp of butter per salmon. Is that good?
When I do end up eating out for lunch, I make an effort to skip the pork and the beef since Chicken’s always a good option depending where you are getting it from and how it’s cooked.
One of the healthiest ways is to steam it. Luckily, I love Hainanese Chicken Rice – which is essentially steamed chicken served with sauces and rice. I especially love the one served at Terraz which is conveniently located at my office building. I gotta admit that when it comes to chicken rice though, the actual Hainanese Chicken Rice is my downfall. The rice is almost always sooooo delicious!
Another healthy way to eat chicken is to grill/roast it – and Peri-Peri Charcoal Chicken does the roasting right! While Senor Pollo is still my favorite grilled/roast chicken ever, Peri-Peri Charcoal Chicken is right up there, however their sides were not outstanding. Luckily, they had more than 5 different sauces to offer to season your chicken with. Nice concept and what sets them apart, I feel.
I really do hope that I get to sustain and maintain this “Healthy Eating” lifestyle. If I don’t want to do it for myself, then I have to do it for Jodie!
